i'm bored.
so i made a list of well made (french & japanese, primarily) items that are relatively affordable that all of you should have in your kitchens.



a kuhn ricon european peeler


a matfer whisk (matfer is an awesome french company that makes indistructable lifetime tools)


matfer bowl scraper-- for scooping up all those chopped onions from your cutting board, and scraping down a bowl of icing or batter or mashed potatoes


rubbermade heat resistant spatula


the gray kunz spoon. perfect for saucing plates all pretty-like

matfer reinforced fiberglass spoon. like that great wood spoon your mom had but this one doesn't absorb or burn.


fish spatula, for turning that bass, snapper, or salmon in the pan without tearing the skin. peltex has one thats $15, made in france of course.


a microplane. perfect for grating cheese, truffles, nutmeg, citrus zests, hard spices, yada yada


a peugeot pepper mill. lasts many lifetimes. you NEED fresh cracked black pepper, precracked tastes like shit


8 inch chef knife. i like wusthof. japanese brands are great too (hattori, kikuichi, mac, etc)


japanese mandolin, for making really really thin slices. good stuff.

Great thread! Are the peugeot pepper mills really that good? I've made it my life mission to find the perfect pepper grinder (one that doesn't suck and that you don't have to re-adjust after three turns).

The japanese mandolin sounds good too... are you sure that's not just a Ronco food slicer though?

I bought that very same Wusthof for my ex-wife, cuts like magic. I'm sticking with my Asian Grocer 20 dollar special for the time being because it has great feel, weight, is durable and holds a bit like a knife many multiples it's value.

well brother i seem to have solved your life mission. peugeots are the best, hands down, and you will find them in any great french or american kitchen worth its salt (or pepper, ha ha, im hilarious). jbprince is the cheapest, 4 inch, 8 inch, 12 inch (katie, shut it!)

mandolins are great. french ones are like 100 bucks. get the japanese "Benriner" one. theres a japanese lady in an apron on the front of the box. 30 bucks. you can definitely cut your finger off with it though. slices wicked thin potatoes for the perfect potato gratin.

awesome justin, these will last a lifetime.

Reversible Iron Grill/Gridle for your stove top. Nice alternative if you don't have access to a real grill.

the microplane is indispensible!! i also would add to this list some simple plastic squirt bottles and maybe a ring mold or two.

also, on a software note: aspiring chefs need to learn about vinegars. one of the best tools in the kitchen.

10 inch is definitely too unwieldy!

i have a 9.1 inch japanese hattori (bout $250), and a 10 and 8 inch wustof classic......i only use the 10 inch for lobster & melons. i use my hattori for anything where my cut is important, and my 8 inch for carrots/celery/onions.

i'm a big fan of peugout, theres a reason they are in every professional kitchen......because they are unbreakable (kinda like the technics of peppermills)

great chefs do not use tongs!!!
many many great chefs will violently throw things at you if you use them. the ONLY thing i would say that they are acceptable for is turning meat on a grill........ but purists have you do it by hand

but stiring or plating with tongs is really bad. you get crap all up inside there, it crushes the food, contaminates food (from one food item to another), hard to clean, etc. i would rather use a kitchen fork or a kitchen spoon (like the gray kunz spoon i posted) or slotted spoon.
